Causes of gluten intolerance and celiac disease, analyze from ancient wisdom and Yin Yang theory. Radish is the best food you should eat on a gluten free diet.

In an ancient Chinese medical document there is a story. Once a monk from India came to China. He saw that Chinese people were eating wheat flour. He was surprised:" Wheat flour is very hot(cause inflammation). It may cause heat toxin. How can you eat it?" But when he saw the radish in their bowls, he said"Then you are Ok as radish can remove the heat toxin caused by wheat flour."


Before I learned gluten free diet and celiac disease, I always wondered why westerners didn't have problem to take wheat flour as staple foods without eating radish? And the bread is baked which increased heat toxin.

I never did experiment on this. However, If you are a celiac disease related doctor/researcher you can try to add radish in your patient's diet and let me know the result. I know many experts think it's unbelievable. They think celiac disease and gluten intolerance are genetic issue. That's why there are so many kids are diagnosed to have this problem.

But I think it's all caused by improper diet. Even if it's genetic issue, it is because their parents didn't have a healthy diet. Let me explain it by Yin-Yang theory.

We know that the rice is grown up in water, so rice absorbs more Yin Qi; while wheat is grown up on the ground, so it gets more sunshine and absorbs more Yang Qi. The Sun rises from the east and so there are more Yang in the east. That's why Asian people eat more rice to absorb Yin Qi to keep Yin-Yang balance. The Sun goes down to the west and so there are more Yin Qi in the west. That's why people in the west eat more wheat to absorb more Yang Qi to keep Yin-Yang balance.

In the past, we had a balanced diet. Some wheat containing staples and a little dessert on the table didn't cause health problem. But within these two decades, westerners, especially Americans used to consume large portion of foods, much more sugary drinks and other high energy density food. This leads to heat toxin accumulation inside the body. A little wheat (or even gluten) can cause uncomfortable reaction or even serious healthy problem. That's why celiac disease and wheat intolerance are increasing in recent years.

If it's true that gluten intolerance and celiac disease are caused by heat toxin, it becomes easy for us to prevent it from diet. Besides selecting gluten free foods, we should avoid all food and cooking method that may cause heat toxin.

Real gluten free diet should including the followings:

Foods:

Besides gluten free foods, eat more foods with cold energy such as bitter melon, radish, celery, duck, rabbit meat, etc. Don't eat venison and lamb. Limit the intake of chicken, beef (especially roasted meat), full-fat milk, etc.

Preparation:

Steam, boiling, and stewing are better. Avoid baking and roasting. And cook from scratch, prepared without adding solid fats and sugars.
