Many gluten free menu and recipes imitate wheat food and dishes, in which there are breads and cookies (made of rice flour).  Most cooking methods are still roasting, grilling, which increase heat. ( We mentioned that gluten allergy or celiac disease is caused by heat toxin.).

This makes me think of some vegetarian cooking. They imitate meat dishes, adding lots of vegetable oil to match that flavor. That's a misunderstanding. Actually vegetables have their own texture and flavor. They should have their own cooking method to match these texture and flavors.

Gluten free cooking is the same. Gluten free foods have their own way to exhibit the flavor too. We should learn cooking from those who take gluten free foods as staples, such as Japan and other East Asian countries.

Research showed that Japan is the place where there is minimal celiac disease. Japanese cuisine mainly adopts boiling and steaming, less grilling or frying. Most Japanese foods are light flavor. They involve much more seafood and fish. Their main foods are rice. Their desserts are rice cake. Actually, traditional Chinese eating habit, especially that from east part of China is also suitable for gluten intolerance people.


What gluten free menu, East Asian style should be like?


Rice Porridge + Egg + Pickle or Vegetable salad + Rice Cake (option);


Milk or Soybean Milk + Rice Cake + Stir Fried Vegetable or Vegetable Salad


Rice Ball  or Steamed Rice + Soup


Steamed rice + stewed meat with vegetables or Stir Fried meat with vegetable+ vegetable salad

Rice Noodle with Meat and Vegetables + Side dish


Steamed rice + Stir Fried Vegetable + Soup

or Rice Noodle Soup + Side Dish
